Mac & Cheese Recipes for Leftover Ham – Macaroni Cheese

I wanted to make homemade mac & cheese with some leftover ham, and for the life of me I cannot find my macaroni & cheese recipe book! It has our favorite recipe in there!
Anyone have a good mac & cheese recipe? Mine called for 3 cans of evaporated milk, but I’ll work with anything you all can find.
Thanks!

    INGREDIENTS
    8 ounces uncooked elbow macaroni
2 cups shredded sharp Cheddar cheese
    1/2 cup grated Parmesan cheese
    3 cups milk
    1/4 cup butter
    2 1/2 tablespoons all-purpose flour
    2 tablespoons butter
    1/2 cup bread crumbs
    1 pinch paprika
    DIRECTIONS
Cook macaroni according to the package directions. Drain.
In a saucepan, melt butter or margarine over medium heat. Stir in enough flour to make a roux. Add milk to roux slowly, stirring constantly. Stir in cheeses, and cook over low heat until cheese is melted and the sauce is a little thick. Put macaroni in large casserole dish, and pour sauce over macaroni. Stir well.
Melt butter or margarine in a skillet over medium heat. Add breadcrumbs and brown. Spread over the macaroni and cheese to cover. Sprinkle with a little paprika.
    Bake at 350 degrees F (175 degrees C) for 30 minutes. Serve.

This is so easy and my family fave!
Prepare a cheap box of mac and cheese or two depending on how much you want. While it’s still hot, add two big spoonfuls of sour cream, a couple of eggs beaten with 1/2 cup of cream or evap milk, some shredded cheddar. Then add other ingredients- see below. Bake in a casserole pan until hot in the middle so the eggs are cooked (they make it hold together and give a nice texture)
    Other ingredients
    -broccoli or spinach
    -ham
-basil, oregano, and drained diced tomatoes from a can (tastes like pizza!)
    -Green Chilies and chili powder
    -Ranch dressing and Bacon bits
Or you can serve it plain for those picky eaters on your list
(all amounts are approximate and adjust according to how many boxes you make and according to taste.

    Try this one:
    1/2 pound elbow macaroni
    4 tablespoons butter
    2 eggs
    6 ounces evaporated milk
    1 teaspoon salt
    Fresh black pepper
    10 ounces sharp cheddar, shredded
In a large pot of boiling, salted water cook the pasta to al dente and drain. Return to the pot and melt in the butter. Toss to coat. Whisk together the eggs, milk, salt, and pepper. Stir into the pasta and add the cheese. Heat over low heat, stirring for 3 minutes or until creamy.

Here is my homemade mac & cheese recipe:
    2 T butter
    2 T flour
    1 c. milk
    1 c. cheddar cheese, shredded
    2 c. cooked pasta
melt the butter in a pan, add flour and mix. Cook for about 1 min. Add milk. Stir until thick, then add cheese. Stir until melted. Add pasta and serve.
You can add veggies or meat. I like to add frozen broccoli, califlower, and carrots with ham. It’s really filling. If that doesn’t work for you then go to allrecipes.com.
