Of course the roast ham and turkey have their places reserved at the dinging table, but it&#8217;s great to have some other options up one&#8217;s sleeve.</p>
<p>A few of my favorites are as follows:</p>
<h3>Texas Smoked Beef Brisket</h3>
<p>Ingredients</p>
<p>8-10 pound untrimmed brisket &#8211; you want a nice piece with a layer of fat on one side.</p>
<p>Half a cup of chili marinade</p>
<p>2 tablespoons hot chili powder<br />
1 teaspoon cayenne<br />
1 teaspoon fresh ground pepper<br />
6 cloves of crushed garlic<br />
2 teaspoons lemon juice</p>
<p>Wood  for smoking &#8211; I recommend a mixture of oak or fruit wood and small amount of hickory for extra flavour.</p>
<p>Preparation<br />
Heat up your smoker and add wood, follow your instruction manual as this will differ depending on our make and model.</p>
<p>Make your chilli marinade<br />
Simply mix all the marinade ingredients together &#8211; this can be prepared earlier and stores fine in the fridge.</p>
<p>Prepare the Brisket<br />
Take your Brisket and rub a half cup of your marinade all over it. Place beef brisket in smoker fat side up ( this is important to increase tenderness and flavour of your beef brisket ) up for 8-10 hours at around 220 degrees Fahrenheit.<br />
You may open the smoker and baste the brisket with more of your chilli marinade once or twice during this period if you wish. Finally take the brisket from the smoker and place in your over for the final two hours of cooking.Your oven should be approximately the same temperature as your smoker.</p>
<p>Cook for 10 hours</p>
<h3>Another great one is Beef Brisket with BBQ Sauce</h3>
<p>Ingredients:<br />
3/4 cup water<br />
1/4 cup Worcestershire sauce<br />
1 tablespoon vinegar<br />
1 teaspoon beef bouillon granules<br />
1/2 teaspoon dry mustard<br />
1/2 teaspoon chili powder<br />
1/4 teaspoon ground red pepper<br />
2  garlic cloves, minced<br />
2 1/2 pounds beef brisket<br />
<strong>For the Sauce</strong><br />
1/2 cup ketchup<br />
2 tablespoons brown sugar<br />
2 tablespoons butter or margarine</p>
<p>Directions:</p>

<p>For  cooking liquid, in a bowl combine water, Worcestershire sauce, vinegar,  bouillion granules, mustard, chili powder, red pepper, and garlic;  reserve 1/2 cup liquid for sauce.<br />
Trim fat from brisket. If  necessary, cut brisket to fit into cooker; place in a 3 1/2 or 4-quart  crockery cooker. Pour remaining liquid over brisket.<br />
Cover; cook on low-heat setting for 10 to 12 hours or high-heat setting for 5 to 6 hours.<br />
For sauce, in a small saucepan combine 1/2 cup reserved liquid, catsup,  brown sugar, and margarine. Heat through. Pass sauce with meat.</p>

Meanwhile, beat together eggs and cream together until combined. Add pasta to a large amount of boiling, salted water. Cook 10-12 minutes or until tender, but firm. Drain well.<br />
Turn hot pasta into the heated serving dish; toss pasta with butter. Pour egg mixture over and toss until pasta is well coated. Add bacon, cheese, and parsley; toss to mix. <p>Ingredients</p>
<ol>
<li>1 ½ cup couscous</li>
<li>1 ½ cup water</li>
<li>1  scallion</li>
<li>1 green or red pepper</li>
<li>olive oil</li>
<li>salt and pepper to taste</li>
<li>1 T basil</li>
<li>3 T chopped parsely</li>
<li>pinch of thyme</li>
<li>pine nuts</li>
</ol>
<p>Roast the cous cous in a skillet in olive oil over medium heat. Boil  water and add to cous cous. Gently stir once. Set aside for about 5 minutes.</p>
<p>Sautee the scallions and bell pepper in olive oil, add salt and pepper to  taste. Mix in basil, parsely, soy sauce, and thyme.</p>
<p>Fluff cous cous with fork and add the finely chopped scallions/ bell pepper mixture. Serve with pine nuts sprinkled over the top.</p>

<p>Ingredients</p>
<p>1 ½ cups plain flour<br />
3 tablespoons cocoa<br />
1 teaspoon baking soda<br />
1 cup vegan sugar (or less, depending on how sweet you like your cake)<br />
½ teaspoon salt<br />
1 teaspoon vanilla essence<br />
5 tablespoons cooking oil (my preference is rice bran oil)<br />
1 tablespoon cider vinegar<br />
1 cup cold water</p>
<p>Serves 6- 8</p>
<p>Preheat oven to 355˚F (180˚C).</p>
<p>Mix sifted flour, cocoa, baking soda, sugar and salt in a large bowl.<br />
Make 3 holes in the dry ingredients. Put vanilla essence into one, oil into another and cider vinegar into the third. Pour cold water over the top. Mix only enough to combine all ingredients.</p>
<p>Pour the batter into a greased parchment paper lined 8 inch round pan.<br />
Bake for 30 minutes until toothpick comes out clean.</p>
<p>Serve warm with fresh fruit or any one of the delicious frosting recipes listed. Enjoy!</p>

<p>Serve sprinkled with chopped chives or parsley.</p>

<li>1/2 teaspoon cayenne pepper, or to taste</li>
<li>1/4 teaspoon ground allspice</li>
<li>1 teaspoon salt</li>
<li>2 teaspoons coarsely ground black pepper</li>
<li>1 cup barbecue sauce, purchased or home made, more as needed</li>
</ul>
<p><strong>Directions</strong><br />
Make the spice rub: mix together cumin, brown sugar, paprika, cayenne pepper, nutmeg, salt, and pepper.<br />
Trim any large areas of excess fat from the chops. Don’t bother with small bits, they help keep the meat from drying out. Sprinkle the spice mix over the meat and rub in. If time allows, wrap ribs in plastic wrap or put in a covered container and refrigerate for an hour or two.<br />
Set up the grill for indirect heat, medium temperature. Grill the meat for approx 30 mins each side, any remaining fat should be crispy and brown (may take more or less time, depending on chop thickness and grill temperature). Brush with barbecue sauce when chops are almost done. Serve with extra barbecue sauce.</p>
