Do You Have A Good Recipe For Leftover Ham?

We had a turkey AND a ham this year and I have a lot of the ham leftover. I am planning a ham and beans dinner, but would like something different and tasty for the leftover ham. Hit me with your best recipes!

For breakfast, you could cut the ham into small cubes and cook it in a cheese omelet.
How about ham salad, or ham quiche, or ham croquettes, or a ham and potato frittata.
Just go to foodnetwork.com and type in ham in the recipe search…there are dozens.
Take some of the ham and chop it finely or run it through a food processor. Add some cream cheese until it looks like a really yummy spread. Throw in some chopped olives and a little ground black pepper. Mix thoroughly. Spread on tortillas or other flatbread, roll, and slice into “pinwheels.”
Boil the ham with green beans.

Fry the ham in a skillet, use bacon grease to liberally coat the bottom of the skillet first, then lay shoe-string potatoes around the ham. When it’s all cooked, ladle over some warm trukey gravy and serve it up.
It doesn’t taste very good, but it’s guaranteed to add two pounds to your waistline.
Scalloped potatoes and ham. I cheat and use a box of scalloped potatoes, then throw in a couple handfuls of diced ham.

1 cup instant grits
1 1/4 cups boiling water
2 Tbsp. butter
1 cup or more grated cheddar
A little cayenne
2 eggs
A cup or more of cubed ham
Put the grits in a large bowl and stir in the boiling water. Then stir in the butter and cheese, then the cayenne and eggs, then the ham. Put it in a greased/sprayed 8×8 dish and bake at 400F for about half an hour or until set.

Easy Islander Chicken
1/3 cup olive oil
3/4 cup diced ham
1 chicken, cut in pieces
1 cup sliced onions
2 garlic cloves, minced
3 tomatoes, chopped
2-1/2 cups water
2-1/2 cups raw long grain rice
3/4 cup chopped green pepper
1 bay leaf
1/2 tsp. to 2 tsp. salt
1/2 tsp. cumin seed
1/8 tsp. saffron
-Heat olive oil in large skillet or Dutch oven, saute chicken, ham, onions and garlic until chicken pieces are browned. Add tomatoes. Cover. Simmer for 20 minutes.
-Add remaining ingredients, bring to a boil – lower heat, cover, simmer for another 20 minutes until the rice is done (add additional liquid if needed)
Optional – add clams near the end of the cooking time, or 1/2 cup of cooked bay shrimp just before serving.

Emeril’s Split Pea
1 tablespoon olive oil
2 cups chopped yellow onions
Salt
Freshly ground black pepper
Crushed red pepper flakes
1 tablespoon chopped garlic
1 bay leaf
1 pound dried green split peas, picked over and rinsed
8 cups chicken broth
1 cup milk
Hot Sauce (of your choice) to taste
Directions
1. In a large soup pot over medium-high heat, heat the oil. Add the onions. Season with salt, pepper, crushed red pepper. Sauté for 2 minutes.
2. Add the garlic, bay leaf, and split peas and cook, stirring , for 1 minute. Add the broth and bring to a boil, then reduce the heat to medium and simmer, stirring occasionally, for 45 minutes, until the peas are tender. Remove from the heat and let cool slightly. Remove the bay leaf and discard. Add the milk and, using a hand-held immersion blender, process until smooth. Add the hot sauce and serve hot.
Yield: 8 servings
