This Festive Season Beef Brisket Recipes Are a Must

Beef Brisket RecipesWith Christmas fast approaching it’s a good time to be gathering some tasty recipes for holiday meals. Of course the roast ham and turkey have their places reserved at the dinging table, but it’s great to have some other options up one’s sleeve.

A few of my favorites are as follows:

Texas Smoked Beef Brisket

Ingredients

8-10 pound untrimmed brisket – you want a nice piece with a layer of fat on one side.

Half a cup of chili marinade

2 tablespoons hot chili powder
1 teaspoon cayenne
1 teaspoon fresh ground pepper
6 cloves of crushed garlic
2 teaspoons lemon juice

Wood for smoking – I recommend a mixture of oak or fruit wood and small amount of hickory for extra flavour.

Preparation
Heat up your smoker and add wood, follow your instruction manual as this will differ depending on our make and model.

Make your chilli marinade
Simply mix all the marinade ingredients together – this can be prepared earlier and stores fine in the fridge.

Prepare the Brisket
Take your Brisket and rub a half cup of your marinade all over it. Place beef brisket in smoker fat side up ( this is important to increase tenderness and flavour of your beef brisket ) up for 8-10 hours at around 220 degrees Fahrenheit.
You may open the smoker and baste the brisket with more of your chilli marinade once or twice during this period if you wish. Finally take the brisket from the smoker and place in your over for the final two hours of cooking.Your oven should be approximately the same temperature as your smoker.

Cook for 10 hours

Another great one is Beef Brisket with BBQ Sauce

Ingredients:
3/4 cup water
1/4 cup Worcestershire sauce
1 tablespoon vinegar
1 teaspoon beef bouillon granules
1/2 teaspoon dry mustard
1/2 teaspoon chili powder
1/4 teaspoon ground red pepper
2 garlic cloves, minced
2 1/2 pounds beef brisket
For the Sauce
1/2 cup ketchup
2 tablespoons brown sugar
2 tablespoons butter or margarine

Directions:

For cooking liquid, in a bowl combine water, Worcestershire sauce, vinegar, bouillion granules, mustard, chili powder, red pepper, and garlic; reserve 1/2 cup liquid for sauce.
Trim fat from brisket. If necessary, cut brisket to fit into cooker; place in a 3 1/2 or 4-quart crockery cooker. Pour remaining liquid over brisket.
Cover; cook on low-heat setting for 10 to 12 hours or high-heat setting for 5 to 6 hours.
For sauce, in a small saucepan combine 1/2 cup reserved liquid, catsup, brown sugar, and margarine. Heat through. Pass sauce with meat.

Cous Cous With Herbs

cous-cous-herbsI just made a delicious herbed cous cous for this evenings meal. I wanted to thank free vegetarian recipes for this excellent dish – here is my version with a couple of  my own additions:

Ingredients

  1. 1 ½ cup couscous
  2. 1 ½ cup water
  3. 1  scallion
  4. 1 green or red pepper
  5. olive oil
  6. salt and pepper to taste
  7. 1 T basil
  8. 3 T chopped parsely
  9. pinch of thyme
  10. pine nuts

Roast the cous cous in a skillet in olive oil over medium heat. Boil water and add to cous cous. Gently stir once. Set aside for about 5 minutes.

Sautee the scallions and bell pepper in olive oil, add salt and pepper to taste. Mix in basil, parsely, soy sauce, and thyme.

Fluff cous cous with fork and add the finely chopped scallions/ bell pepper mixture. Serve with pine nuts sprinkled over the top.

Cauliflower Soup – Vegetarian Soup Recipe

This is a great vegetarian recipe and goes well served with a nice salad.

  • 1 medium head cauliflower, cut into tiny flowerettes
  • 1/4 c butter
  • 2 TBS flour
  • 2 c light cream
  • 3/4 tsp salt
  • 2/3 c chopped onion
  • 2 c chicken broth
  • 1/2 tsp Worcestershire sauce
  • 1 c grated cheddar
  • chopped chives or parsley

Cook cauliflower in boiling salted water, drain, reserving liquid. Melt butter, add onion and cook until soft. Blend in flour, add broth and cook stirring constantly, until mixture comes to a boil. Stir in 1 c liquid from cauliflower. Heat to boiling and stir in cheese.

Serve sprinkled with chopped chives or parsley.

Mac & Cheese Recipes for Leftover Ham – Macaroni Cheese

I wanted to make homemade mac & cheese with some leftover ham, and for the life of me I cannot find my macaroni & cheese recipe book! It has our favorite recipe in there!
Anyone have a good mac & cheese recipe? Mine called for 3 cans of evaporated milk, but I’ll work with anything you all can find.

Grilled Pork Chops Recipe

Servings: 4
Prep Time: 10 minutes
Cook Time: 2 hours

Ingredients

  • 4 large pork chops
  • 1 teaspoon ground cumin
  • 2 teaspoons brown sugar
  • 2 teaspoons paprika
  • 1/2 teaspoon cayenne pepper, or to taste
  • 1/4 teaspoon ground allspice
  • 1 teaspoon salt
  • 2 teaspoons coarsely ground black pepper
  • 1 cup barbecue sauce, purchased or home made, more as needed

Directions
Make the spice rub: mix together cumin, brown sugar, paprika, cayenne pepper, nutmeg, salt, and pepper.
Trim any large areas of excess fat from the chops. Don’t bother with small bits, they help keep the meat from drying out. Sprinkle the spice mix over the meat and rub in. If time allows, wrap ribs in plastic wrap or put in a covered container and refrigerate for an hour or two.
Set up the grill for indirect heat, medium temperature. Grill the meat for approx 30 mins each side, any remaining fat should be crispy and brown (may take more or less time, depending on chop thickness and grill temperature). Brush with barbecue sauce when chops are almost done. Serve with extra barbecue sauce.

Are Hardee’s Biscuits From Scratch?

I have a friend who used to work for Hardee’s and he said that their biscuits are made from a mix, either adding milk or water, probably the latter. How can they say that they’re “made from scratch” when they’re not? From scratch (to me, a baker) means combining FRESH ingredients and immediately baking them. No one ever touted a Betty Crocker Chocolate Cake Mix as being from scratch.

In my opinion if you really want to make biscuits from scratch then this is the recipe to use.

Chocolate Peanut Butter Brownies Recipe

  • 4 ounces Semisweet Chocolate
  • 1/4 cup Butter
  • 1/2 cup Peanut Butter
  • 1 cup Sugar
  • 2 large Eggs — slightly beaten
  • 1 teaspoon Vanilla
  • 1/4 cup Flour
  • 1 pinch Salt
  • 1 tablespoon Unsweetened Cocoa Powder
  • 1 tablespoon Powdered Sugar

Heat oven to 325F. Line 8″ baking pan with foil.
Combine chocolate, butter and peanut butter in saucepan.
Cook over low heat stirring until smooth.
Remove from heat and stir in granulated sugar. Cool 1-2 minutes; add eggs and vanilla. Mix thoroughly. Stir in flour and salt.
Transfer batter to prepared pan. Bake until set, 35-40 minutes. Test doneness with toothpick.
Cool in pan 20 minutes.
Carefully lift foil from pan and cool brownies completely.
Freeze until firm. To serve, cut into squares, combine cocoa and powdered sugar; sift over brownies.

Chewy Peanut Butter Brownies Recipe

Delicious chewy peanut butter brownies recipe.

  • 1/2 cup peanut butter
  • 1/3 cup margarine, softened
  • 2/3 cup white sugar
  • 1/2 cup packed brown sugar
  • 2 egg
  • 1/2 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Preheat oven to 350 degrees F (175 degrees C ).
Grease a 9×9 inch baking pan.
In a medium bowl, cream together peanut butter and margarine. Gradually blend in the brown sugar, white sugar, eggs, and vanilla; mix until fluffy. Combine flour, baking powder, and salt; stir into the peanut butter mixture until well blended.
Bake for 30 to 35 minutes in preheated oven, or until the top springs back when touched.
Cool, and cut into 16 squares.

Peanut Butter Swirl Brownies

This is a great little peanut brownie recipe.

1 boxed brownie mix for a 13×9 pan, prepared according to box directions
1 cup creamy peanut butter
1/3 cup sugar
4 tablespoons butter, melted
2 tablespoons all-purpose flour
1 teaspoon vanilla extract
1 large egg

Preheat oven to 350-degrees F. Line a 13×9 pan with aluminum foil, spraying the bottom of the foil-covered pan with cooking spray.
Prepare peanut butter swirl: using a stand mixer, beat peanut butter, sugar, butter, flour, vanilla, and egg until well blended.
Spread two-thirds of the prepared chocolate brownie batter into the bottom of the pan. Top with 6 large (or 12 small) dollops of peanut butter mixture. Top with remaining 1/3 of brownie batter. With tip of knife, cut and twist through mixtures to create swirled effect.
Bake brownie 30 to 35 minutes or until toothpick inserted 2 inches from edge comes out almost clean. Cool in pan on wire rack.
When cool, cut brownie lengthwise into 4 strips, then cut each strip crosswise into 6 pieces.

One thing I want to try is using roasted peanuts with the brownie mix.
